Ingredients

  • 1 block (14 oz) firm tofu, cubed
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots), chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup or sugar
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Directions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Heat vegetable oil in a large skillet or wok over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove tofu from skillet and set aside.
  3. In the same skillet, add a bit more oil if needed, then sauté the diced onion until translucent.
  4. Add the minced garlic and grated ginger to the skillet, and cook for an additional minute until fragrant.
  5. Stir in the red curry paste and cook for another minute.
  6. Pour in the coconut milk, soy sauce, and maple syrup (or sugar). Stir well to combine.
  7. Add the mixed vegetables to the skillet and cook until they are tender but still crisp.
  8. Return the cooked tofu to the skillet and simmer for 5-10 minutes, allowing the flavors to meld together.
  9. Season with salt and pepper to taste.
  10. Serve the Vegan Coconut Curry over cooked rice, garnished with fresh cilantro.
