- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots), chopped
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup or sugar
- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving
Directions

- Heat vegetable oil in a large skillet or wok over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove tofu from skillet and set aside.
- In the same skillet, add a bit more oil if needed, then sauté the diced onion until translucent.
- Add the minced garlic and grated ginger to the skillet, and cook for an additional minute until fragrant.
- Stir in the red curry paste and cook for another minute.
- Pour in the coconut milk, soy sauce, and maple syrup (or sugar). Stir well to combine.
- Add the mixed vegetables to the skillet and cook until they are tender but still crisp.
- Return the cooked tofu to the skillet and simmer for 5-10 minutes, allowing the flavors to meld together.
- Season with salt and pepper to taste.
- Serve the Vegan Coconut Curry over cooked rice, garnished with fresh cilantro.
