For the Mashed Potato Topping:
- 4 large potatoes, peeled and diced
- 1/4 cup plant-based milk
- 2 tablespoons vegan butter
- Salt and pepper, to taste

- Preheat your oven to 200°C (400°F) and lightly grease a baking dish.
- In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened.
