Ingredients

  • For the Lentil Filling:
    • 1 cup dry green lentils, rinsed
    • 2 cups vegetable broth
    • 1 onion, chopped
    • 2 carrots, diced
    • 2 celery stalks, diced
    • 2 cloves garlic, minced
    • 1 tablespoon tomato paste
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • Salt and pepper, to taste
    • 2 tablespoons olive oil

    For the Mashed Potato Topping:

    • 4 large potatoes, peeled and diced
    • 1/4 cup plant-based milk
    • 2 tablespoons vegan butter
    • Salt and pepper, to taste

Directions

  1. Preheat your oven to 200°C (400°F) and lightly grease a baking dish.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened.
  3. Add the minced garlic and cook for an additional minute, until fragrant.
  4. Stir in the tomato paste, dried thyme, and dried rosemary, and cook for another minute.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender and the mixture has thickened.
  6. While the lentil filling is cooking, prepare the mashed potatoes. Place the diced potatoes in a pot of water and bring to a boil. Cook until tender, then drain and mash with plant-based milk, vegan butter, salt, and pepper.
  7. Once the lentil filling is ready, transfer it to the prepared baking dish and spread evenly.
  8. Top the lentil filling with the mashed potatoes, spreading them out evenly to cover the filling.
  9. Bake in the preheated oven for 20-25 minutes, or until the mashed potatoes are lightly golden on top.
