- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley, for garnish
Directions
- In a large pot, heat some oil over medium heat. Add the diced onion, carrots, and celery, sautéing until softened.
