Ingredients

  • 1 cup dried green or brown lentils, rinsed and drained
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Directions

  1. In a large pot, heat some oil over medium heat. Add the diced onion, carrots, and celery, sautéing until softened.
  2. Add the minced garlic, ground cumin, and paprika to the pot, stirring to coat the vegetables in the spices.
  3. Pour in the vegetable broth and add the rinsed lentils and diced tomatoes. Stir to combine.
  4. Add the bay leaves to the pot and season with salt and pepper to taste.

  6. Once the lentils are cooked, remove the bay leaves from the soup.
