Ingredients

  • 1 block (14 oz) firm tofu, cubed
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 bell peppers, sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Thai red curry paste
  • 1 can (14 oz) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup or sugar
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Directions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Heat vegetable oil in a large skillet or wok over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove tofu from skillet and set aside.
  3. In the same skillet, add a bit more oil if needed, then sauté the sliced onion until translucent.
  4. Add the minced garlic, bell peppers, broccoli, and carrot to the skillet. Cook until the vegetables are slightly tender.
  5. Stir in the Thai red curry paste and cook for 1-2 minutes until fragrant.
  6. Pour in the coconut milk, soy sauce, and maple syrup (or sugar). Stir well to combine.
  7. Add the cooked tofu back to the skillet and simmer for 10-15 minutes, allowing the flavors to meld together and the vegetables to fully cook.
  8. Season with salt and pepper to taste.
  9. Serve the Vegan Thai Red Curry over cooked rice, garnished with fresh cilantro.
