Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • Salt and pepper to taste
  • 2 tablespoons chickpea flour (besan) or breadcrumbs
  • 2 tablespoons vegetable oil, for frying

For the Mango Chutney:

  • 1 ripe mango, peeled and diced
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon grated ginger
  • 1/2 teaspoon chili flakes
  • Salt to taste

Instructions

  1. For the Lentil Patties:
  2. In a saucepan, combine the red lentils and water. Bring to a boil, then reduce the heat and simmer for 10-15 minutes, or until the lentils are tender and the water is absorbed. Remove from heat and let cool slightly.
  3. In a large mixing bowl, mash the cooked lentils with a fork or potato masher until smooth.
  4. Add the chopped onion, minced garlic, ground cumin, ground coriander, garam masala, turmeric powder, salt, pepper, and chickpea flour or breadcrumbs to the mashed lentils. Mix until well combined.
  5. Shape the lentil mixture into small patties using your hands.
  6. Heat vegetable oil in a skillet over medium heat. Fry the lentil patties for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
  7. For the Mango Chutney:
  8. In a bowl, combine the diced mango, chopped red onion, chopped cilantro, lime juice, grated ginger, chili flakes, and salt. Mix well.
