Ingredients

  • 4 large bell peppers, any color
  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
  3. In a large skillet, heat some oil over medium heat. Add the diced onion and minced garlic, sautéing until softened and fragrant.
  4. Stir in the cooked quinoa, black beans, corn, diced tomatoes, ground cumin, smoked paprika, and chili powder. Season with salt and pepper to taste. Cook for another 5 minutes, allowing the flavors to meld.
  5. Spoon the quinoa and bean mixture into each bell pepper until they are filled to the top.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the peppers are tender.
  7. Once cooked, remove the foil and garnish the stuffed peppers with fresh cilantro.
  8. Serve hot and enjoy the deliciousness!
